These are hardened, which means the aluminum they are made of is treated for durability. And they are coated in PTFE nonstick (AKA TEFLON). There are many nonstick pans that do not use PTFE as well – we are working on a rotation of our favorites – but in general, PTFE-coated cookware is considered the safest as long as you handle it well and ignore it. Make sure to use safe dishes, use a low temperature rather than high when you can, don’t trust an empty pan, and wash them when you’re done, and you’ll be fine.
Note that these All-Clad frames are sold to be safe up to 500 degrees Fahrenheit (although the lids are limited to 350 degrees). That’s the upper limit of “safe” when it comes to cooking on PTFE. We recommend sticking with this for your basic eggs, pancakes and grilled cheese, and maybe reach for something different if you need to finish or bake a dish in the oven. Do what you are comfortable with!
These pans are compatible with gas, electric, and outdoor cooking methods, and have a warp-resistant base. The stainless steel handles can have a different design than what you are used to, but I personally like them a lot – I can turn my eggs without a spatula thanks to the top. It’s also dishwasher safe, although we recommend gentle hand washing to preserve that outer coating. The walls of the pan are nice and high, giving you a good vantage point when going in with the spatula. They’re also really stable and have a nice weight to them – they don’t feel cheap or flimsy, unlike other nonstick pans I’ve used over the years.
